Beef Tapa Silog
A Palay-coded Filipino breakfast for the Sabi Sounds table.
Current working direction: beef tapa using Saint C Cocomansi as a base, vinegar, housemade banana ketchup, fried egg and atsara.
KULTURA IN MOTION · MANILA 2026 · CONCEPT PREVIEW
A proposed listening-café collaboration bringing Sabi Sounds’ vinyl-led Salcedo energy together with Palay’s Filipino food language and Chef Fhred’s Melbourne café experience.
This page is a creative discussion piece, not a public event announcement.
01 · THE IDEA
The starting point stays intentionally compact: one Filipino breakfast, one specialty coffee, one café bake and one tablea-led finish. Not a full Palay takeover, and not Sabi Sounds wearing somebody else’s identity.
The opportunity is to make the menu feel native to Sabi Sounds — vinyl-led, day-to-night, playful and community-minded — while Palay brings a distinctly Filipino point of view shaped by Melbourne hospitality.
What happens when a Melbourne-born listening café in Salcedo meets a Filipino restaurant from Melbourne?
03 · SHARED LANGUAGE
Sabi Sounds gives the collaboration its rhythm, listening culture and day-to-night café energy. Palay brings cultural storytelling, Filipino flavour and the experience of building a Filipino hospitality brand in Melbourne.
Vinyl, hi-fi sound, bright graphic moments, coffee-to-late-night rhythm and a neighbourhood feeling that invites people to stay and listen.
Palay blue, rice and grain references, confident editorial type and Filipino food stories refined without losing where they came from.
04 · WHAT WE COULD BUILD TOGETHER
The microsite can evolve from concept preview into the public event page once Sabi Sounds and Palay lock the café format, menu, service flow and partner credits.
Test the four current ideas with the café team, with the affogato led by Liana’s Tablea and Kariton Vanilla Gelato; keep a straight tablea chocolate drink only as the service fallback.
Confirm service hours, covers, pricing, workflow, equipment and whether the activation is walk-in, pre-booked or both.
Hero reel, menu-item stills, vinyl and speaker details, Chef Fhred with the Sabi Sounds team and natural Saint C / Liana’s integration.
Replace proposal language with confirmed details, final photography, booking information and the finished collaborative menu.

06 · THE MANILA RUN
Sabi Sounds is the listening-café chapter in the September journey. Follow the dates in order, or jump directly to the collaboration that speaks to you. Every event page stays connected so Kultura in Motion reads as one continuous Manila run.
The proposed affogato combines warm Liana’s tablea with Kariton Vanilla Gelato — giving both Filipino partners a clear role in the café menu.
